Chef Tournant

Ocala, FL

The Chef Tournant is a versatile and experienced culinary professional responsible for supporting all kitchen operations across the World Equestrian Center complex. This role works in close collaboration with Executive Chefs, Chefs de Cuisine, and other culinary leaders to ensure a consistent standard of excellence in food preparation, team leadership, and guest satisfaction. The Chef Tournant adapts to various culinary environments as needed, maintains the highest sanitation standards, and upholds all Health and Safety requirements.

Essential Functions:

1. Leading Skills

• Provides day-to-day supervision of culinary staff ands fills in at any stations of outlet as needed.

• Leads by example, fostering a culture of integrity, teamwork and professionalism.

• Encourages mutual trust, respect, and open communication among all team members.

• Clearly communicates performance expectations and job responsibilities.

• Maintains employee productivity and supports a positive work environment.

• Leads kitchen shifts while actively participating in food preparation and service.

• Ensures ingoing communication to align team efforts with departmental and company goals.

2. Culinary Standards & Responsibilities

• Assists in overseeing daily culinary operations across outlets to ensure quality and consistency.

• Supports R&D for new menu development and seasonal rollouts.

• Upholds brand and property culinary standards as defined by Executive Chefs and Chefs de Cuisine.

• Acts as a guest service ambassador, addressing feedback and promoting satisfaction.

• Coaches culinary staff in guest service standards and food preparation techniques.

• Maintains awareness of trends, feedback, and improvement opportunities across all outlets.

3. Training, Development & Human Resources

• Supports culinary leadership in onboarding, mentoring, and cross-training staff.

• Provides guidance and coaching to team members to develop their skills and culinary knowledge.

• Participates in training on recipes, techniques, and station-specific expectations.

• Upholds and enforces all property policies and procedures consistently and fairly.

• Assists with performance management documentation and disciplinary support when needed.

• Maintains an open-door policy and actively listens to employee feedback.

4. Additional Responsibilities

• Shares relevant information with culinary leaders and teammates through meetings, email, or in-person discussions.

• Collaborates across departments to ensure smooth operations and a unified guest experience.

• Participates in pre-service meetings, leadership briefings, and strategic planning sessions.

• Assists with inventory management and food cost controls, as directed.

Physical Requirements:

• Must be able to lift, push, pull, and carry a weight of 50lbs.

• Must be able to work walking and or standing continuously for a period of 8 hours and up.

• Associate may have to stand, walk, reach with arms and hands, climb or balance, and to stoop, kneel, crouch or crawl.

• Associate is often required to sit and use his or her hands and fingers to handle or feel.

• Vision abilities required by this job include close vision.

• Associate must talk and hear.

Qualifications, Education, Experience, Skills, and Abilities:

• High school diploma or GED; 8 years experience in culinary, food and beverage, or related professional area OR

• 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 8 years experience in culinary, food and beverage, or related professional area.

• Position requires walking/standing for extended periods of time.

• Must be available to work evening and weekend hours and have open flexible availability.
