Banquet Captain

Sanibel, FL

Sundial Beach Resort & Spa, located on tropical Sanibel Island, is seeking enthusiastic Banquet Captain to join our team. Candidates must be hardworking, have a strong work-ethic, and be a responsible team player.

  
Primary Responsibilities: 

  • Maintains constant communication with guests and on-site contact to ensure all expectations are met or exceeded
  • Maintains constant contact with kitchen staff to ensure complete effective communication between food production and food service
  • Ensures all functions are set and staff is prepared and organized before required time on BEO
  • Inspects table place settings, including table linen, china, glass, silverware and condiments for correct placement and ensures that each element is clean, undamaged and attractive
  • Ensures proper setting of buffet tables and other food service tables
  • Supervises clearing and post function cleanup and garbage removal
  • Maintains clean and orderly back areas, pre-function areas and storage areas
  • Assures that all china, glassware, silverware, linen, etc are returned to their proper location after each event
  • Assists with staff training programs
  • Conducts regular pre-shift meetings to build rapport and ensures all team members  are well informed
  • Work with the Event/Sales Manager(s) to ensure quality and accuracy of set-ups within all banquet rooms and catering locations
  • Become familiar with the micro system used to process banquet checks
  • Assists in the proper set-up and take down of all catered events including the bridal suite
  • Sets-up and details bridal suite according to specifics given by Catering Sales Manager
  • Assists Catering Sales Manager in Setting up any décor provided by the bride such as place cards, cake knife and server, menus, favors, etc.
  • Personable and gains a friendly, professional relationship with Bridal Party & Parents
  • Assist Event Manager in Ceremony line up and gathering of bridal party as well as holding bride in a separate area so she is not seen by guests or the groom.
  • Directing the bridal party throughout the event on where they need to be at what time
  • Welcomes the guests immediately with a smile, makes eye contact, is attentive, outgoing and enthusiastic while directing them to each new location ex: ceremony to cocktail hour then to dinner
  • Offers Hors D’ Oeuvres / cocktails to bride and groom when they return from photos
  • Is familiar with all food being served at events including preparation, main ingredients, side dishes and garnishes, and aware of allergies
  • Quality checks are done as soon as possible after a course is served. If a guest is not satisfied notify the captain immediately
  • Clean up of bridal suite throughout the event
  • Assist Catering Sales Manager and DJ in lining bridal party up for introductions
  • Packing all of the Brides belongings throughout the event and at the end of the night
  • Packaging of food items for the Bride and Groom to take home as well as their cake top
  • Complete breakdown of bridal suite at the end of event.
