Lead Banquet Cook - FT
The Hilton North Scottsdale at Cavasson has an opening for a Lead Cook to help motivate/cultivate our culinary team. We do everything from weddings and large events to intimate dinners and small meetings. If you have a desire to cook great food from scratch, to elevate your craft, and work with a variety of fresh seasonal products please contact us regarding this position. Candidates must have flexible availability on evenings, weekends, and holidays. Fine dining, hotel or banquet experience is a plus.
Primary Responsibilities:
- Become shift lead in the absence of the Sous Chef, Executive Sous Chef and Executive Chef
- Train, teach and mentor hourly cooks and stewards, maintaining a positive attitude at all times
- Organize and execute daily production and prep lists
- Ensure that all walk-in coolers are neat and that all products are stored property, labeled, freshness and FIFO.
- Prepare food in accordance with prescribed recipes and standards
- Aid and assist in other areas of the kitchen as needed
- Facilitate set ups, maintain break downs, and clean any dirty workstations
- Hold cooks responsible for maintaining a clean workstation, sanitation and following correct food a handlers’ standards
- Serve items in accordance with established portion and presentation standards
- Notify the Chef in advance of expected shortages
- Ensure that assigned workstations and equipment are clean and sanitary
- Maintain security and safety in work areas
- Maintain neat, professional appearance, and always observe personal cleanliness rules
- Adheres to state and local health and safety regulations
- Covers, dates, and property store all leftover products that are reusable
- Demonstrates and promotes a safe and secure environment for guests, associates, and hotel assets in compliance with workplace policies and procedures and regulatory requirements
- Observes and secures associate compliance with procedure and methods
- Assist with other duties as assigned by the Chef
Qualifications, Education, Experience, Skills, and Abilities:
- Good knife skills.
- Ability to move/transfer (up to 50 lbs.).
- Ability to remain stationary for lengthy periods.
- Ability to communicate effectively.
- Maintain composure and objectivity under pressure.
- Patience and a willingness to understand others.
- Culinary experience required.
